Vegan version and alternatives

For vegans: replace cream with coconut milk (one can of fatty coconut milk, 400 ml). Add 100 ml of oat milk, 100 g of coconut sugar, 2 tablespoons of lavender, 1 teaspoon of vanilla extract, a pinch of salt. Thicken with 2 tablespoons of cornstarch (mix in cold milk before adding). The cooking process is similar. Without eggs, the mixture will not thicken, but coconut fat will give it creaminess. For lactose-free option, use lactose-free cream and milk.

Unusual combinations: lavender + something else

Lavender ice cream is an excellent basis for experiments. Lemon and lavender: add lemon zest and juice (50 ml) to the base — you get a refreshing duet. Honey and lavender: replace part of the sugar with honey (for example, 100 g of sugar + 50 g of honey) — the aroma will become warmer. Chocolate and lavender: add pieces of dark chocolate (70% cocoa) to the ready-made ice cream. Berries: blueberries, bilberries, raspberries — perfectly complement lavender.
